Our guide in Saigon is a big fan of rolled steamed rice pancakes (Banh Cuon) and swears the best ones can be found at a specific stall in Ben Thanh Market.
The fun thing about market stalls and street food is that you get to watch them make your lunch.
Our little pancakes involved quickly cooking a paper thin stream of rice flour or starch (I’m not sure which was used here), tapioca, and water. The cooked pancake was then peeled off the cooking pot and rolled around a filling of pork and/or shrimp.
Never having had a rolled steamed rice pancake before, I can’t assert that these were the best in Saigon, but they sure were good!
